Easter/Passover.
Buy Matzo Meal at Macey's and follow the recipe on the back to make the Matzo Balls. You can buy the Matza (unleavened bread, looks like big crackers) to accompany the soup. Liz, correct me if I'm wrong here :0)
Easter egg in a basket

4 hard boiled eggs (makes a dozen eggs in a basket)
1/2 celery stalk finely chopped
1 small or Roma Tomato finely chopped
4-5 baby carrots shredded
Crackers
½ tsp. Paprika
1 dash black pepper
1/8-1/4 tsp. Salt (to taste)
3 dashes garlic powder
6 tsp. Parmesan cheese
1/8 tsp.
1/4 cup Mayo® (enough to keep ingredients stuck together)
Mix tomato, celery, carrots, seasonings and mayo together in bowl. Pour out onto a dish and mold to look like an egg, place crackers around the egg to resemble a basket and garnish with shredded cabbage,( around the crackers) if desired. Enjoy! And have a Happy Easter!
Peanut Butter Eggs

Ingredients
- 1/2 (8 ounce) package cream cheese, softened
- 1/4 cup butter, softened
- 1 cup creamy peanut butter
- 1/2 teaspoon vanilla extract
- 1 pound package confectioners' sugar
- 2 tbls milk
- Melting candy chocolate (you can substitute 3 cups semisweet chocolate chips + 3 tbls shortening if you don't have it)
Directions
- In a large mixing bowl, beat cream cheese, butter, peanut butter and vanilla until smooth. Beat in sugar. Stir in coconut if desired. Form rounded tablespoonfuls into egg shapes. Place on waxed paper-lined baking sheets. Chill for 30 minutes.
- In a microwave-safe bowl or heavy saucepan, melt chocolate, and stir until smooth. Dip eggs until coated; place on waxed paper to harden.
- For more decorative eggs, place about 1/4 cup melted chocolate in a small plastic bag. Cut a hole in the corner of the bag; pipe chocolate over tops of eggs. Store in the refrigerator.
**note you can also make these into truffles, or use a candy molds too!**
Kneaders Coconut Macaroon Nest

Macaroon Cookie Ingredients:
· 2/3 cup all-purpose flour
· 5 1/2 cup flaked sweetened coconut
· 1/4 teaspoon salt
· 14 oz can sweetened condensed milk
· 1 teaspoon vanilla extract
· 1 teaspoon almond extract
Preparation:
In a large bowl, stir together flour, coconut, and salt. In a separate bowl mix together sweetened condensed milk, vanilla extract, and almond extract. Combine both mixtures and blend well. Using a rounded scoop drop dough onto a well greased cookie sheet. Take the back of a moist spoon and round out the center of each cookie forming a deep nest shape.
Bake at 350 for 12-15 minutes. Cool completely before removing from cookie sheet. Dip each cookie in Chocolate Ganache allow to start setting up. Then, Drizzle the cookie with melted white chocolate (using a circular pattern). Place jelly beans in center of nest before chocolate sets completely and allow to dry.
Chocolate Ganache Ingredients:
· 2 cups semisweet chocolate chips
· 2 cups heavy cream
· 2 tea vanilla extract
Ganache is used in many bakeshops. Melt and pour over cakes as a glaze, or chill and whip until light for a filling. Ganache is a very versatile icing. It can be stored in the refrigerator for up to two weeks, or about 3 days at room temperature.
Preparation:
Place chocolate chips in a large bowl. Pour cream into a sauce pan and bring to a boil As soon as the cream boils up to the top of the pan, quickly remove from heat and pour it over the chips. Let stand for a minute. Stir with a whisk to mix until smooth. Stir in vanilla and blend. Place a piece of plastic wrap directly on the surface, and allow to cool to 85 degrees.

Noodle Nests

- 4 cups chow mein noodles
- 3 cups miniature marshmallows
- 3 tablespoons butter
- 30 small jellybeans
Directions
1. Line a cookie sheet with foil and grease with spray-on cooking oil.
2. Pour noodles into a large bowl. Melt the butter and marshmallows over medium heat, stirring until smooth. (you can also stir in chocolate chips or food coloring for a little bit of color) Pour marshmallow mixture over noodles, stirring until well coated.
3. Rub some butter on hands and form noodle mixture into six round balls. Place balls on prepared cookie sheet. With the back of a teaspoon, press the center of each ball to make a hollow indentation.
4. Let nests set until they are firm. Fill each with small jelly beans. (Other small candies of your choice may be substituted, such as M & M's, small gumdrops, chocolate covered raisins, chocolate covered peanuts, etc.) We usually use peanut M & M's. You can also put little Peeps on top.
